Flat idlis aren't your fault. It's the weather.
Batter that doubles overnight in Chennai can sit flat for a whole day in a Toronto winter. Fermentation is biology — and once you understand it, you can make it work anywhere.
What's actually happening in the jar
Natural lactic acid bacteria and wild yeasts on the urad dal and rice start feeding on starch.
They release carbon dioxide, which gets trapped in the sticky urad batter and makes it rise.
They also produce acid — that's the pleasant tang of a good idli. Too long, and it turns sour.
Temperature is everything
Approximate times. Your batter is ready when it has risen noticeably, looks bubbly and airy, and smells pleasantly sour — not when the clock says so.
7 tricks for batter that rises every time
Get the ratio right
4 parts idli rice to 1 part whole urad dal is a classic starting point. Old, poor-quality urad ferments poorly.
Add methi
Soak ½ teaspoon of fenugreek seeds with the urad. Many cooks find it helps fermentation and softness.
Grind urad fluffy & cool
Grind urad separately with a little cold water until light and airy. A wet grinder keeps the batter cool; in a mixie, grind in short bursts.
Mix with your hand
Many families swear by mixing the batter by hand for a minute — the warmth helps get things going.
Use non-iodised salt
Rock salt or sea salt is the traditional choice. Some cooks find iodised salt slows the rise.
Leave room to rise
Fill the container only halfway, cover loosely, and don't stir once it starts fermenting.
Find a warm spot
Use the oven-light or Instant Pot trick below if your kitchen is cooler than 25°C.
Cold-kitchen methods that work
| Method | How to do it | Watch out for |
|---|---|---|
| 💡 Oven with the light on | Place the covered batter in a switched-off oven with only the light on. The bulb keeps it warm. | Don't switch on the heat. Put a note on the door so no one preheats it! |
| 🍲 Instant Pot "yogurt" mode | Pour batter into the steel pot, cover with a plate, and use the low yogurt setting for 8–10 hours. | Check halfway; it can over-ferment. |
| 🧊 Insulated casserole / hot box | Warm the casserole with hot water, empty it, then place the batter container inside and close. | Re-warm after a few hours in very cold weather. |
| 🛁 Warm water bath | Stand the batter container in a larger bowl of warm water, wrapped in a towel. | Top up the warm water occasionally. |
Troubleshooting
| Problem | Likely cause | Fix |
|---|---|---|
| Didn't rise at all | Too cold, old urad, or too much water | Move to a warm spot; use fresh urad; grind thicker next time. |
| Rose, then collapsed | Over-fermented or stirred too hard | Steam sooner; fold gently instead of stirring. |
| Too sour | Fermented too long or too warm | Shorten the time; refrigerate as soon as it rises. |
| Hard, dense idlis | Too much rice, or urad not ground fluffy | Increase urad slightly; grind urad until airy. |
| Flat, sticky idlis | Batter too thin | Add a spoon of rice flour or rava; next time use less water. |
Where you live matters
Expect 14–24 hours at room temperature. Use the oven-light or Instant Pot method.
Usually 10–14 hours. Use the warm spot tricks only on cool nights.
Often 6–10 hours. Check early and refrigerate as soon as it rises.
Tools for perfect idlis

Living in the USA or Canada? You'll need a 110V wet grinder. Compare models in our wet grinder guide, and keep batter warm in an insulated hot box.
Frequently asked questions
How long does idli batter take to ferment?
About 8–12 hours at 26–32°C. In cooler kitchens it can take 14–24 hours. Go by the rise and the smell, not just the time.
Can I ferment idli batter in the oven?
Yes — place it in a switched-off oven with only the light on. The bulb provides gentle warmth. Never turn on the oven's heat.
Should I add salt before or after fermentation?
Most South Indian families add salt before fermenting. In very hot weather, some add it after to slow things down.
Why is my idli batter not rising?
The most common reasons are a cold kitchen, old urad dal, too much water, or urad that wasn't ground light and fluffy.
How long can fermented batter be stored?
Refrigerate it as soon as it has risen. It usually stays good for 3–4 days, getting slightly more sour each day.
