According to traditional wisdom, brass (an alloy of copper and zinc) should only be used with a tin coating for acidic cooking. This tin coating, known as “Kalai,” helps preserve the antioxidants of the food cooked in them.
Despite being lightweight, brass is known to preserve over 90% of the nutrition of the food cooked in it. The Kalai coating is applied using pure tin by the traditional clusters of Tamil Nadu.
